A tilting braising pan is a professional kitchen appliance, mainly used in commercial kitchens and catering businesses. It uses contact heat and can boil, fry, simmer, or stew, making it suitable for preparing large quantities of food. The cooking system can tilt, allowing efficient transfer of food into containers.
The RATIONAL iVario is for cooking a wide variety of dishes, such as meat, seafood, vegetables, stews, or sauces. It is suitable for sautéing, slow cooking, and boiling. Traditional fried dishes like omelets or rice dishes can also be effectively prepared in a tilting pan.
It is particularly suitable for preparing dairy-based dishes, thanks to the powerful iVarioBoost heating system, which prevents food from burning. The system notifies the user when the dish is ready — without the need for supervision.
Cooktops, pots, pans, fryers, pressure cookers, and bain-marie units are all combined into one — in the iVario, allowing you to cook, roast, and fry up to four times faster, with up to 40% lower energy consumption. This way, the iVario Pro replaces many traditional kitchen appliances while ensuring high-quality results for every dish.
