The use of state-of-the-art electronics allows for continuous control of the oven chamber temperature, from front to back. The innovative cooking system of the 550 series combines the characteristics of the famous "Biscotto di Sorrento", a very porous brick that heats up quickly and retains heat for a long time. The cooking chamber is therefore unique in its kind, as it allows high temperatures to be reached in a very short time, maintaining them throughout the day.
